Lemon Peppered Salmon

Made this last night for dinner. Really easy to make and came out amazing. Eat it with a bed of mixed green and peppers! 

What ya Need:
1) Foil Papper
2) 3 Lemons
3) 2 pieces of Salmon
4) Salt and Pepper 

How Ya Make It:
1) Set oven to 300 
2) Slice lemon into thin slices and place on foil paper
3) Add salt and pepper to both sides of salmon 
4) Juice half a lemon onto both pieces
5) Place Salmon on top of Lemon and rap in foil paper
6) Place in oven for about 25min
7) ENJOY

Afternoon: 1000m erg, Mile Run, Back and Abs

Apple Chips

Whatca Need:
1) Green Apple
2) Corer
3) Cinnamon 

How ya make it:
1) Corer the Apple
2) Set oven to 250
2) Slice the apple into thin pieces
3) Spray pan/foil paper with Pam
4) Spread the apple slices equally in the pan
5) Sprinkle Cinnamon
6) Place in oven for 45-1 hour
(Check on them and make sure they don't burn) 
7) TAKE THEM OUT AND EAT!!!

Paleo Orange Chicken and Sweet Potato Circles

HOW YA MAKE IT:

1 lb. boneless, skinless chicken thighs (cut into bite size pieces)
3 T fat (coconut oil works well here)
juice of 2 oranges
zest from 1 orange
1 t fresh ginger
3 T coconut aminos or wheat-free soy sauce
1 t chili garlic sauce or sriracha
3 green onions, chopped
How Ya Make It:
1) In a medium size sauce pot, add the orange juice, zest, ginger, coconut aminos and chili garlic sauce or sriracha.
2) Set over medium heat and let simmer to reduce and thicken while the chicken cooks.
3) In a saute pan, heat 3 T of the fat of your choice, over medium high heat.
4) Add the chopped chicken thighs and cook until a nice brown crust has developed on the chicken pieces, about 6 minutes.
5) Add the chicken to the sauce pot and stir to coat with the orange sauce.
6) Chop the Green Onions and sprinkle ontop
7) ENJOY IT!!!

Morning workout: 2500m erg and 150x5m sprints
Afternoon: Chest and Abs

Gluten-Free (Paleo) Carrot Muffins



Whatca Need:


1 1/2 cups blanched almond flour
1/4 teaspoon sea salt
1/2 teaspoon baking soda
1/2 tablespoon cinnamon, plus more for sprinkling on top
3 eggs
2 tablespoons coconut oil, melted
1 ripe banana, mashed
2 tablespoons maple syrup or honey (optional)
1 1/2 cups carrots, grated
1/2 cup pecans, chopped

How ya make it:

1)Preheat oven to 325 degrees.
2)Line muffin pan with paper liners.
3)In a bowl, combine almond flour, salt, baking soda and cinnamon.
4)In a separate bowl, mix together eggs, oil, mashed banana, and maple syrup.
5)Stir carrots and pecans into wet ingredients.
6)Stir wet ingredients into dry.
7)Scoop a heaping ¼ cup batter into paper lined muffin pan and sprinkle tops with cinnamon.
8)Bake for 20 to 25 minutes
Let cool 5 to 10 minutes on wire rack.

Almond Butter Raisin Apple Sandwich 

Whatca Ya need:
1) Green Apple
2) Almond Butter
3) Raisins

How Ya Make It:
1) Corer the Apple
2) Slice into thin pieces
3) Spread Almond Butter and add raisins 
4) ENJOY!!!




Turkey and Veggie Meatbalss

Whatca Need:
1) Pound of Turkey
2) 1/3 Green and Red Peppers 
(Or any other veggies you may want)
3) 1/3 Onion
4) Salt and Pepper
5) Pam
6)Large bowl

How Ya Make it:
1) Set the oven at 375 degrees 
2) Place foil paper on a pam and spray with pam
3) Spray large bowl with pam and add the turkey and all the veggies(cut up into pieces)
4) Mix it all together with your hands
5) Grab a handful of meat and make into a ball then place on foil paper
6) Place into oven and let it cook for about 25min
7) ENJOY!

Dinner:

My meal last night was so amazing that I had the leftovers today

Workout:
Morning erg: 1k than 10 100m sprints with 1:30 break each break we abs.
Afternoon: Cox the masters team

Egg White and Tuna Fritata
Great for those morning you don't have time to cook a meal. Make the night before and they last.

What ya need:
Bowl of eggs whites (depending on the amount you want)
Green and Red Peppers
Onion
Tun
Muffin Tin


How Ya Make It:
1) Set oven to 350
2) Add all ingredients to a bowl
(there is really no amount it all depends on your taste)
3) Mix it all together and pray down muffin tin with PAM
4) Pour it all into the Tin
(make sure not to fill all the way, it tends to rise)
5) Let it cook in the oven for about 25min or until ready
6) ENJOY!

 Almond-Crusted Mahi Mahi
(Quinoa on the side)
This has to be one of the best meals that I have made thus far and it is really easy!

Watcha Need:
zest & juice of one lemon
2 cups almond slices
2 tsp. salt
1 tsp. pepper
2 mahi mahi fillets

How ya make it:
1) Preheat oven to 350
2)Put almond meal, salt and pepper and some lemon in a ziplock bag.
3) Rinse and pat fish dry. Once Fish is dry add it to the zip lock bag and SHAKE IT UP!!
4) Grab a small pan, layer it with foil, pray with pam and place fish on top. 
(make sure you use all the lemon juice, almond slices and season that are left it the ziplock)
4) Place in over and let it bake for about 27min or till ready. 
5) ENJOY!!!

• 3/4 cup coconut flour
                                                                                         •  1 cup almond milk
• 1/2 tsp baking powder
• 1 tsp cinnamon
• 1/2 tbsp Vanilla
• 2 tbsp Honey
• 4 eggs
• 1/2 tsp salt
• 2 tbsp Coconut oil
• Add half a chopped up apple


Lemon peppered chicken with onions. 


Spinach Salad with yellow and red peppers tomatoes topped with Tuna.

The Paleo Fox

How's it going? I'm starting this blog to have a place to show all the fun stuff that I cook in my college dorm kitchen at Marist College. I have always had a love for cooking, but not having a kitchen in Freshman dorms put a stop to it all. But as the years go on at my marvelous college, I am now able to cook in my new sophomore dorm! Most of the stuff I cook are foods that are easily accessible from any local market and are 100% or as close to Paleo as possible.
